You keep hearing that avocados contain a lot of fat. Accordingly, most people shy away and prefer to leave them on the vegetable shelf. The avocado is so healthy after all. Although it contains a lot of fat, it is also one of the healthiest fats because it contains plenty of monounsaturated fatty acids. And this in turn can e.g. regulate cholesterol levels. So do not always walk past the avocados in the future, but rather access them more often.
When the avocados have landed in the shopping cart, most people have one more question: What should I do with it? Simply eating the avocado raw is not particularly culinary. Very simple, just make a guacamole or grill the Central American fruit. It tastes really delicious. If you like, you can also conjure up a soup from it. It’s super tasty too. And above all, quick and easy to prepare. These two recipes prove it.
Recipe # 1 - quick avocado soup
- 2 avocados
- 1 cup of chicken broth
- half a cup of wine
- half a cup of yogurt
- a cup of cream
- Salt and pepper to taste
First, peel and dice the avocado. Then heat the chicken broth and add the avocado cubes, the wine, the cream and the yoghurt. Then puree the whole thing and season with salt and pepper.
Recipe No. 2 - Avocado Broccoli Cream Soup
- 2 onions
- 2 cloves of garlic
- some oil
- 800 ml of boiling water
- 500 g broccoli
- 1 avocado
- 1 tomato
- 100 ml cream
Chop the cloves of garlic and the onions and braise them in a saucepan with a little oil. Then pour on the boiling water. Then wash the broccoli and add it to the pot. Now the whole thing has to cook for about 15 to 20 minutes.
After the cooking time, puree the mixture and season to taste. Then cut the avocado and tomato into small pieces, add and puree everything again. Then all you have to do is stir in the cream and the delicious avocado broccoli cream soup is ready.
