Coriander butter is a pleasure, especially when grilled. Herb butter has been very popular for decades. Whether in a baguette, with a steak or as a spicy spread - herb butter is an integral part of barbecues and picnics, especially in summer.

But it doesn't always have to be the classic variant with parsley and chives. You can also refine butter wonderfully with coriander and set completely new accents in the kitchen. Coriander butter is quickly made and offers Asian taste experiences for barbecues and parties.

Coriander butter: basic recipe and variations

➔ Ingredients:

For a basic recipe for coriander butter, you need the following ingredients:

  • 200 g butter (organic if possible)
  • ½ bunch of coriander
  • salt and pepper
  • 1 tablespoon of lemon juice

➔ Preparation:

❶ It is best to take the butter out of the refrigerator several hours before preparing it so that it can be easily processed afterwards. It should be as soft as possible.

❷ Whisk the butter with a blender and add the lemon juice and some salt and pepper. Mix the mass thoroughly.

❸ Cut the coriander into small pieces and add it to the butter and gently stir the mixture with a whisk. Taste the finished herb butter and season if necessary.

❹ You can now put the coriander butter in a bowl and refrigerate. You can also spread the butter on parchment paper and then form a roll from it. Flip the paper around and twist the ends together like a candy. Then put the butter in the fridge for about 2 - 3 hours.

" My advice: This basic variant can still be modified according to taste. For example, you can use lime juice, add finely chopped chilli or some freshly grated ginger.

The coriander butter tastes great with steaks and grilled fish, but also with ciabatta or baguette.
